Ingredients
3 pounds Yukon Gold potatoes
2 teaspoons fine salt + extra to taste
4 tablespoons unsalted butter, divided + extra for topping
1/2 cup Blue Plate®️ Mayonnaise
1/4 cup heavy cream
1 tablespoon parsley, finely chopped, for garnish
Freshly ground black pepper, for garnish
Directions
WASH, peel and cut potatoes into quarters. Transfer potatoes to the bowl of an Instant Pot® (or other pressure cooker) and add just enough water to cover. Add the 2 teaspoons salt and 2 tablespoons of the butter.
SET the Instant Pot pressure setting at high for 7 minutes. When done, use the quick release valve to immediately release pressure. Drain potatoes in a strainer and transfer to a heat-proof bowl.
MASH potatoes with a potato masher or ricer. Add mayonnaise, heavy cream and remaining butter and mix well. Salt to taste.
SERVE garnished with chopped parsley and freshly ground black pepper and top with a pat of butter, if desired.

3 cups sauerkraut, rinsed, well drained
1 lb. boneless smoked pork chops
1/4 teaspoon coarse ground black pepper
1 green bell pepper, cut into large pieces
1/3 cup water
1/4 teaspoon salt
1/4 teaspoon coarse ground black pepper
--- 1. Melt margarine in large skillet over medium heat. Add onions; cook and stir until golden brown. Add sauerkraut; cook 5 to 8 minutes or until sauerkraut is lightly browned, stirring occasionally.
2 Add pork chops, bell pepper, water, salt and pepper. Cover; cook over medium-low heat for 10 minutes or until pork chops are thoroughly heated.

I am very excited about today’s recipe. I have literally made it four times since getting the recipe from my mother-in-law just a few weeks ago. It is hands-down the BEST roast I have EVER eaten!

This style of recipe is one of my favorites because it’s so easy. It’s a great dump and go kind of recipe. All you do is:
Place the chuck roast in the bottom of your crock pot.
Sprinkle the ranch and au jus mixes over the top of the roast.
Add the butter and pepperoncini peppers.
Place the lid on top and cook over low heat for 8 hours or more.
We’ve eaten this over rice and mashed potatoes and I loved it both ways. My mother-in-law also suggested it for sandwiches, so we might try that next!

au jus gravy mix
butter
