In today's recipe, I’ll be showing you how to make the BEST Mexican Creamy Garlic butter chicken. I’ll share how to layer the flavors and maintain delightful juicy oven-baked chicken.
Bake temp: 380 degrees
Bake time: 1 hr
Ingredients
4 pounds of chicken ( 2 breast 4 chicken legs)
4 Tbsp butter
2 Tbsp Olive oil
8 garlic cloves
2 tomatoes
1 onion
1 Anaheim pepper or your choice of green pepper
1 small bay leaf
4 oz tomato sauce
1 cup chicken broth (1 cup warm water + 1 Tbsp knorr natural chicken bouillon)
1 cup half & half
1 Tbsp Ap flour
Cilantro to taste
Seasoning ingredients
1 Tbsp Mexican oregano
1/2 Tbsp onion powder
1/2 Tbsp chili powder
1 1/2 tsp ground cumin
1 1/2 tsp paprika
1 tsp salt
1 tsp black pepper
Tips
For extra creamy use 1/2 cup half & half + 1/2 cup heavy whipping cream
A little faster bake temp: 400 degrees for 45 minutes
All chicken is different with that being said, once the dish is cooked you’ll notice an oil layer. If you have a lot you can remove it with a step spoon until you get desired gloss.
Poblano is a great alternative to Anaheim green pepper
